Your pilot log book is your record and you can enter anything you want !
Yo wouldn't add the time in the flight columns.

In Canada, and I assume the US would be similar, flight time is
defined as everything from startup to shutdown IF the intent is to
fly. Taxi testing doesn't apply as flight time, as you have said, and
doesn't need to go in any logs. However, there had better be insurance
in place, as lawyers see things a bit more seriously.
