My job was recently was impacted by corporate downsizing.

Often when traveling for interviews, companies will pay you for the mileage you
drive to the interview.

With a PPL, is it okay to accept the "driving mileage compensation", if you flew
to the interview instead of driving ?

Absolutely. Think of it this way - if they don't care how you got there,
only that you got there, then you aren't providing them or anybody else
except yourself a service by flying.
