Can you assume wings weight is max T/O weight - max non lifting parts ?
I am trying to find the wing weight for my ventus C

There may be too many variables for that formula.
Try a set of scales?

When I weighed my std Cirrus, I also weighed just the fuselage and stabilator, being Very Careful not to let it fall over. I could do some math and get just the wing weight from that. 'nonlifting' Parts weight was more helpful to me.

No. Try the math and see. You'll be off by 2x (water ballast).

You can measure wing weight with two bathroom scales and get close.

To find weight of wings - subtract weigh of Non lifting parts (NLP) from
empty weight of glider, both of which you should have from the last
weighing schedule.

Do you have the original paperwork delieved with your ship?

My factory Weight and Balance sheet shows 62.7 kg for the right wing
and 62.9 kg for the left wing (138.2 lbs / 138.7 lbs).

This for Ventus cT SN 95 (SN 346 C model)/
