For now, you don't need the distraction of "retractable gear".

I just took my intro hang gliding class. I noticed that I was
"hanging" from the glider in a standing position. I was expecting to
be more in a laying down position. Is this just a quality of the type
of harness used? The idea of flying seem more appealing while lying
down (more like birds fly, not standing up).

Ask your instructor. If he can't tell you, find another instructor.
