Is an official log book required by the FAA/FAI/insurances/whatever, or can
it be substituted with any log book software (and printout)?

it matters not how you keep a log... just that you do.. with the items
specified in 61.51

actually you need not log anything.. just what is needed for to show
qualification for ratings...
and currency required to carry pax... or flight review endorsements..

that is according to the FARs... the insurance companies may require proof
of hours flown... in specific make/model/ high performance etc... for
reduced rates.. plus they like to see CFI signoffs for different
make/model...

any log can provide this...
and everyone likes paper copies...

All true, but you must have the required instructor endorsements in writing
in some format, not necessarily a log book however.
