Jim,
Is there a document or a "standard" somewhere that states what the
requirements are for aviation headsets? In particular, impedence of
microphones and headphones, etc.

TSO-C57 for headsets and speakers. TSO-C58a for microphones. RTCA/DO-214
for environmental conditions.

Those are the correct references. However, understand that these are the
CIVILIAN specifications. Military wander all over the map.
