Was that a foolhardy stunt, or at that speed is the water hard enough
that with those huge tires an inadvertently hard touch would bounce
the plane rather than digging in or creating enough drag to change the
angle of attack and nosing the plane into the water?

Apparently, the water is plenty hard. The key is to make sure you have the
brakes locked so the wheels ski across the water instead of spinning.

Think about your golf game (or mine - I hit lots of balls in the water). A
ball with backspin will skip once or twice. A ball with no spin will skip
too. A ball with topspin will just make a big plop.

landing on a sand bar.

Not just to slow down, but to maximize the available landing
distance on the bar, touch on the water and have wheels on
the ground at the water's edge.

I've seen pictures of the guys that come up to the annual SuperCub fly-in
here in Wisconsin. Some of them go out onto the sand bars in the Wisconsin
river and use the water both landing and taking off. They've told me that
with larger tires the SC will "stay up" at speeds as low as 35mph.
