I have to wonder why painters show propeller blades in their flight
pictures. The freezing, or partial freezing, of the prop is a camera
artifact. The eye/brain sees a continuous disc so why not show the
props that way in a painting?

Because they're artists not engineers and the pictures look better
that way?
