Ok, I'm not a CFI but:

Where I'm doing my PPL training, they use the Cessna Private Pilot Course
software.

I have a floppy disk which I update each time I finish a ground school
chapter and my CFI updates the same disk after each flight lesson.

By passing this floppy back and forth, they can track my ground school
progress and I can track my flight progress with both camps being able to
pull up quiz results, print reports and show progress on flying skills.

It's a pretty slick system...even if I do have to listen to John and Marha
King's cheesy humor (not to mention the fact that one of the talking heads
they've hired for this itteration of the course is none other than Rick
Rockwell...the original "Who Wants To Marry A Millionaire?" dude!

Perhaps you could just create a spreadsheet to track hours and keep notes
about each student?
