I am gathering the things I need to start building.
Does anyone here have any experience with the portable oxy acetylene
setups?

Is the typical 20ft^3 Oxygen and 10 ft^3 acetylene configuration too
small to be useful when building a fuselage/struts?
How many times will you typically have to refill during the building
process with these smaller tanks?

Depends on how much practice you do before you start on the fuselage. You
could definitely build a whole fuselage of a Pitts with that acetylene tank
alone and maybe one or two oxy refills.
