You set the bracketing for the amount of step desired (1/3, 2/3, 1,
etc..), put the camera in continuous shooting mode, frame and shoot.

In that case, did you have the camera in "P" mode as opposed to "Av"
for your 5D?

With my D300s I usually shoot aperture priority, and when shooting a 3,
5, 7, or 9 shot HDR series, also with auto-bracketing, aperture remains
constant.

I guess if I shot in "P" mode I would have similar results to yours.

Here is one of my HDR shots, a 5 exposure bracket -1.4; -0.7; 0; +0.7; +1.4.
All shot at a constant f/4, and a comparison with the unadjusted shot.
I normally try to shoot HDR to reveal detail in shadows when needed.

I am a little baffled as to why you chose to adjust both shutter speed
and f/stop to
obtain your HDR bracketed set.
I normally find that shooting aperture priority and a 3 to 5 shot
bracketed series
results in a consistent set without DOF issues to deal with in the HDR
processing.
