There are several dynamics issues with the single blade prop that would require a lot of effort to resolve if you are to be able to fold and stow the single blade (counterbalance weight, and where will it go?). Might be easier to stick with the two blades and stow them in recesses in the nose, similar to big wipers. Or, as you suggested, inside doors. for the hardcore racers.
