Time to do something this winter. I know there have been discussions, but as of today, what is the best choice of an -available- display I can run Winpilot on and plug into my 302? A ClearNav is not in my budget.

Consider getting a Dell Streak 5. It has a brilliant, transflective display that is less affected by sunlight than other PDA/phone displays. For a comparison to the iPAQ 310 (a now cheap PDA that I can no longer recommend due to difficulties powering it, and due to its operating system):

The Streak is no longer available new, but runs $150 to $250.

It will not run Winpilot. It is an Android device, and given this, it is probably the most future-proof solution you can find. I run XCSoar on it, which is free software and as such most future-proof and worth the time investment to learn. Switching to Android made my life so much easier in terms of software updates, etc...

You can connect your 302 with a simple bluetooth module.
