Thanks for the last-minute tour of the Kiwi on Friday. I'd have to say that MS Flight Sim is a lot more engaging on the big screen. Other than practicing instrument procedures (which I've done a lot), I've never done much else with simulators because they lack the visual & motion cues. With the huge screen I think you have cured that. Of course I still think you need 2 more projectors to put side views on the sides of the room, and a full-motion hydraulic system would be nice, and I'm sure if your A&P gets creative he can do something with that cockpit from a Cherokee Six...
