There is no way to input the glider's empty weight, AFAIK. The weight is included in the glider type that you select from MENU SETUP Vario Aircraft (scroll down to your glider and select). You can enter ballast and the pilot weight, however:
MENU Flight Ballast
MENU Flight Pilot Weight
These will be added to the empty weight for your glider type.
