What did the Mirage 4000 do there? Just an example of
historical aircraft, or is it used to test some equipment
now?

The Mirage 4000 is on the Air and Space Museum at le Bourget not on the
Paris Air Show

What is up with that big-ass refueling probe on the nose of the Rafale? Is
that actually part of the production model, or just a modification on that
particular aircraft? They couldn't design a retractable probe, or put it
elsewhere? Seems to be tremendously ungainly for such a sleek aircraft, and
probably adds all kinds of drag and increases radar signature, not to
mention limit pilot visibility.
